The Cold Shoulder


If you haven't encountered this societal norm, let me enlighten. The cold shoulder is not, in fact the actual temperature of un-sleeved  arm mid winter. It is not the eighties slouched sweatshirt heating up all but the skewed shoulder skin, nor is it the feeling after your coat is moistened with cold snow or torrential rain. Though the frigid winter mixed with poor fashion choices can create such a sensation. More commonly we find ourselves looking at utter dismissal, rejection or disregard on a person to person level.

 In my experience the cold shoulder can present itself in a person ignoring a person. A person ignoring a situation. A person ignoring another person's situation. A person ignoring a person ignoring their personal situation. A person avoiding another person. A person ignoring all people. A person ignoring social norms or moral norms. A person ignoring clothing norms. A person ignoring or avoiding a problem. A problem ignoring a solution. A solution alluding a problem. And so the list could continue to your inevitable annoyance. At this point I hope you get the idea, actually I hope you had the idea before I even started. If not you should understand it by now.

It is these cold shoulder circumstances that have invaded my winter months. Beside the fact that it is absolutely frigid and windy and gray, people lately seem to be collectively cuddling the cold shoulder. Whether it is on a personal level, an emotional level or a cold level.

No matter how much the winter seems to invade our lives. The cold shoulder and the actions that surround it are not particularly helpful. Ignoring things will not make them go away. In the cold one cannot find comfort. There isn't resolve. There is not understanding and most of all giving the cold shoulder, or receiving the cold shoulder will provide any warmth. And lets face it when it is frigidly, frighteningly, frostily frozen outside no one wants to be cold.  So warm up a friend today!

Erin's Super Easy One Pan Pot Roast
(Don't worry I love its name too!)
 Never a cold shoulder in the kitchen!
TIME: 5+ Hours
Ingredients

  • A shoulder of Beef or pork (See what I did there?) 
  • carrots
  • onions
  • potatoes (golden is my preference, however if you need some color, purple potatoes can be fun)
  • bay leaves
  • Onion powder
  • black pepper
  • mushrooms (If you do not like mushrooms...I won't know you didn't put them in)
  • salt (I use seas salt...reminds me of the sea which is warm :) 
  • Beef Broth 
  • One can of cream of mushroom soup!
Instructions: 

The beauty of this recipe, is that you can put as much or as little in as you desire. You can make it exactly how you want. 
  • I start with a 3ish pound hunk of beef which I skillet brown for like 10 mins! 
  • I then take a large pan (glass 9x11 will work if you don't have a roast pan...if you are having a cold lazy day and don't want to do dishes you can by a disposable one...whoot) put the browned shoulder in the pan/pot
  • I then add a cup of beef broth. (you can substitute water, beer or red wine) 
  • I use my can opener and put in my cream o' mushroom (if you hate shrooms, it can be cream of celery)
  • I chop some carrots (maybe 4) throw 'em in
  • I cut about 10 potatoes into large chunks!(sometimes more) put 'em in the mix
  • I love onions in a roast so I usually cut 2 (realizing you are probably a human you can do one...mer ner) 
  • I then take my onion powder and shake it over the pan til' I am happy (2 tsp)
  • Now I take my pepper grinder and I pepper grind (1 tbs)
  • SALT! I also love salt...so I use about (2 tbs) and I sprinkle it around
  • Take 3-6 bay leaves and sit on top (where you can see them, you will take them out before you serve it!) 


Now cover this with either the pan lid or tin foil. (nice and tight)
Turn your oven on 200. It will take at least 5 hours maybe more...you can leave it the whole work day!
turn your oven on to 300. If you only have 4!
Turn your oven to 350. If you only have 3! 

If you are short on time this may have to be a meal for tomorrow! Roasts are awesome because they taste wonderful and are super tender and can cook all day. The prep is easy and short and you do not dirty too many dishes. You can make it the night before and throw it in the next morning. Leave it in all day while you are at work and then come home to a warm house that smells divine. And any coldness that crept into your day will simply be melted away!

Chocolate Wouldn't Say That



Pretty. Funny. Adorable. Talented. Good cook. Curvy. Sweet. Polite. Southern. Petite. Fun. Caring. Compassionate. And perfect perfection of me. Men generally are rude, dirty, loud, stubborn, selfish, confused, confusing, proud, handsome, devilish, charming, egotistical morons who capture our hearts and then break them, They also would be totally lost without the women in their lives. (Don't worry gents I realize we would be lost without you too...sorta) The question here then in this, Why do us wonderful women get caught up in the concoction of mundane masculinity? I wish I had the answer. But, honestly I do not know, because we women have chocolate. Chocolate has never left me, it always agrees with me and always encourages and allows me to take more. It is sweet and silent, soft and seductive, calming, creamy, cuddly and comforting. It has never said a mean thing to me or broken my heart. Also unlike love or a man, chocolate can be bought. 

Note: Chocolate does not talk, men do. Problem solved.

Kitchen Time! 
For those days when you need to eat your feelings or to replace a man with chocolate. 

Flourless Chocolate Lover Cake


Things you will need...
6 tbs butter and a wee bit to grease the pan
8 ounces of semisweet chocolate (use mini-chips or finely chop it)
6 eggs separated 
(I know thats work but sometimes you just have to do it...)
1/2 tsp of cinnamon
a pinch of salt
3/4 granulated white sugar

Dusting Ingredient: either powdered sugar or chocolate icing 
or just a melted drizzle, raspberries etc...

Direction:
1. Preheat your oven to 300ish degrees
2. Butter your pan (9 inch spring form will work the best) 
3. Butter and chocolate in a large microwave bowl. 
Microwave stirring every 3o seconds until it is smooth and creamy ;)
4. Let it cool slightly and whisk in egg yolks (I LOVE TO WHISK!)
5. Then beat in egg whites
 gradually adding the sugar beating until stiff peaks form.
6. Whisk in the egg whites into the chocolate mixture.
7. Pour into the pan and smooth top. 
(I usually drop the pan gently a couple times to get it smooth)
8. Cook for about 40 mins,the cake will pull from the sides of the pan
9. Let cool, spring from pan and top however you desire. 
(powder sugar or event chocolate sauce and berries etc...)
